  • ½ cup unsalted butter, chilled and cubed
  • 3 to 5 tablespoons ice water
  • 2 medium-sized apples, thinly sliced
  • 1 cup sharp cheddar cheese, grated
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon honey (optional)
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a mixing bowl, combine the flour and salt. Add the chilled butter cubes and mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough starts to come together. Form it into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  2. Preheat your oven to 400°F (200°C). In a large bowl, toss the thinly sliced apples with cheddar cheese, chopped thyme, and honey if using.
  3. On a floured surface, roll the chilled dough into a rough circle about 12 inches in diameter.
  4. Transfer the rolled dough to a baking sheet lined with parchment paper. Pour the apple and cheese mixture into the center, leaving a 2-inch border. Fold the edges of the dough over the filling, pleating as you go.
  5. Brush the exposed dough with the beaten egg and bake for 30 to 35 minutes or until the crust is golden and the apples are tender.
  6. Allow the galette to cool slightly before slicing. Enjoy warm or at room temperature.
