- ½ cup unsalted butter, chilled and cubed
- 3 to 5 tablespoons ice water
- 2 medium-sized apples, thinly sliced
- 1 cup sharp cheddar cheese, grated
- 1 tablespoon fresh thyme, finely chopped
- 1 tablespoon honey (optional)
- 1 egg, beaten (for egg wash)
Instructions
- In a mixing bowl, combine the flour and salt. Add the chilled butter cubes and mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough starts to come together. Form it into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
- Preheat your oven to 400°F (200°C). In a large bowl, toss the thinly sliced apples with cheddar cheese, chopped thyme, and honey if using.
- On a floured surface, roll the chilled dough into a rough circle about 12 inches in diameter.
- Transfer the rolled dough to a baking sheet lined with parchment paper. Pour the apple and cheese mixture into the center, leaving a 2-inch border. Fold the edges of the dough over the filling, pleating as you go.
- Brush the exposed dough with the beaten egg and bake for 30 to 35 minutes or until the crust is golden and the apples are tender.
- Allow the galette to cool slightly before slicing. Enjoy warm or at room temperature.
