Elegant and easy-to-make caramelized onion and goat cheese tarts that offer a delightful harmony of sweet, savory, and creamy textures.

Ingredients

Scale
  • 1 sheet puff pastry
  • 2 large onions, thinly sliced
  • 4 oz goat cheese, crumbled
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon fresh thyme (or 0.5 teaspoon dried thyme)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out puff pastry to fit your tart pan, trimming excess.
  3. Heat olive oil in a skillet, add onions and salt, and cook on medium-low for 20-25 minutes until caramelized.
  4. Stir in thyme during the last minute of caramelizing.
  5. Spread caramelized onions over the pastry and crumble goat cheese on top.
  6. Bake for 20-25 minutes until edges are golden brown.
  7. Cool slightly, drizzle with olive oil, and garnish with thyme before serving.

Notes

For a healthier option, use whole wheat puff pastry or plant-based goat cheese. Serve with a simple salad or wine pairing.
