Instructions
- Preheat your oven to 400°F (200°C).
- Roll out puff pastry to fit your tart pan, trimming excess.
- Heat olive oil in a skillet, add onions and salt, and cook on medium-low for 20-25 minutes until caramelized.
- Stir in thyme during the last minute of caramelizing.
- Spread caramelized onions over the pastry and crumble goat cheese on top.
- Bake for 20-25 minutes until edges are golden brown.
- Cool slightly, drizzle with olive oil, and garnish with thyme before serving.
