Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
2 teaspoons cinnamon
½ teaspoon nutmeg (optional)
2 large eggs, room temperature
1 cup sugar (white, brown, or a mix)
½ cup vegetable oil (or melted coconut oil)
1 teaspoon vanilla extract
1 cup finely shredded carrots
1 cup shredded apple (sweet variety, like Gala or Honeycrisp)
1 cup shredded zucchini, squeezed of excess water
Instructions
Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
In a medium bowl, whisk eggs, sugar, oil, and vanilla until smooth.
Add dry ingredients to wet ingredients, stirring gently until just combined (don’t overmix).
Fold in shredded carrots, apple, and zucchini.
Pour batter into the prepared pan and smooth the top.
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing

Storage: Keeps 3–4 days at room temp, or freeze slices for up to 2 months.
