Ingredients
1 lb chicken breast, cut into bite-sized pieces
2 tablespoons olive oil
2 tablespoons butter
4–5 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
12 oz uncooked pasta (penne or rotini work well)
1 cup parmesan cheese, freshly grated
1 teaspoon Italian seasoning
Salt and pepper, to taste
Fresh parsley, for garnish
Instructions
Prep the chicken: Cut chicken into bite-sized pieces and season lightly with salt and pepper.
Sear: Heat olive oil in a large pot over medium-high heat. Sear chicken until golden on the edges (about 5–6 minutes). Remove and set aside.
Build the flavor base: Add butter to the pot, then garlic. Sauté until fragrant (about 30 seconds).
Cook the pasta: Pour in chicken broth and scrape the pot to release flavor. Add pasta and bring to a boil. Cook until pasta is al dente and most liquid is absorbed, stirring occasionally.
Make it creamy: Reduce the heat to low. Stir in heavy cream, parmesan, and Italian seasoning. Return chicken to the pot and cook until fully done.
Serve: Taste, adjust seasoning, and garnish with fresh parsley before serving warm.
Notes
Leftovers can be stored in the fridge for up to 3 days. Reheat with a splash of broth or milk to revive the sauce.
