For the Shrimp

1 lb shrimp, peeled and deveined

12 tbsp olive oil

1 tsp paprika

½ tsp garlic powder

Salt & black pepper, to taste

For the Creamy Garlic Sauce

2 tbsp butter

34 cloves garlic, minced

1 cup heavy cream

½ cup Parmesan cheese, grated

1 tsp Dijon mustard (optional)

1 tsp fresh thyme (or parsley)

For the Mashed Potatoes

2 lbs potatoes (Yukon Gold or Russet), peeled and chopped

3 tbsp butter

½ cup warm milk

Salt, to taste


Instructions

Boil the potatoes: Place potatoes in a large pot of salted water, bring to a boil, and cook 15–20 minutes until fork-tender. Drain, then mash with butter, warm milk, and salt. Keep warm.

Season the shrimp: Pat dry and toss with olive oil, paprika, garlic powder, salt, and pepper.

Cook the shrimp: Heat a skillet over medium-high, sear shrimp 2–3 minutes per side until pink and slightly golden. Remove and set aside.

Make the sauce: In the same skillet, melt butter. Add garlic and thyme, cooking 30 seconds until fragrant. Stir in cream, Parmesan, and Dijon (if using). Simmer until slightly thickened.

Finish the dish: Return shrimp to the skillet, toss gently in the sauce, and simmer 1–2 minutes.

Serve: Spoon mashed potatoes onto plates, top with shrimp and plenty of sauce. Garnish with extra thyme or Parmesan if desired.

Notes

Potato swap: Try creamy cauliflower mash for a low-carb alternative.

Add spice: A pinch of red pepper flakes adds a nice kick.

Storage: Store leftovers in an airtight container up to 3 days. Reheat gently with a splash of cream to keep the sauce silky.

Not freezer-friendly: The cream sauce may split if frozen.
