These crispy baked zucchini tots are golden on the outside, tender inside, and irresistibly cheesy. A lighter, veggie-packed twist on tater tots that’s perfect for snacks, sides, or party appetizers. Family-friendly, freezer-friendly, and guaranteed to disappear fast!
Ingredients
2 medium zucchini, shredded (squeeze out excess moisture)
¾ cup breadcrumbs (panko recommended for extra crunch)
½ cup grated Parmesan cheese
1 large egg
½ teaspoon garlic powder
½ teaspoon onion powder
Salt & pepper, to taste
Olive oil spray (optional, for crisping)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Grate zucchini and place in a clean kitchen towel; squeeze well to remove excess water.
In a large bowl, mix zucchini, breadcrumbs, Parmesan, egg, garlic powder, onion powder, salt, and pepper. Stir until well combined.
Scoop about 1 tablespoon of mixture, roll into small tot shapes, and place on the prepared baking sheet.
Lightly spray with olive oil for extra crispness.
Bake for 20–25 minutes, flipping halfway, until golden and firm.
Let cool 5 minutes before serving with your favorite dipping sauce.
Notes
For gluten-free tots, use gluten-free breadcrumbs.
For a spicier kick, add smoked paprika or chili flakes.
Freeze unbaked tots on a tray, then store in a bag for up to 2 months. Bake straight from frozen, adding a few extra minutes.
