These Zucchini Pizza Bites are a quick, low-carb, and kid-friendly snack that tastes just like pizza night in mini form! Perfect for parties, game day, or an easy weeknight appetizer.
Ingredients
2 medium zucchinis, sliced into ¼-inch rounds
1–2 teaspoons olive oil (for brushing)
½ cup pizza sauce (or marinara sauce)
1 cup shredded mozzarella cheese
Mini pepperoni slices (or regular pepperoni, cut small)
½ teaspoon Italian seasoning
2 tablespoons grated parmesan cheese (optional)
Fresh basil or parsley, for garnish
Instructions
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Arrange zucchini slices in a single layer and brush lightly with olive oil.
Bake for 5 minutes to soften and prevent sogginess.
Remove from oven and top each slice with a small spoonful of pizza sauce, shredded mozzarella, and your choice of toppings.
Sprinkle with Italian seasoning and parmesan.
Return to oven and bake for 5–7 minutes, or until cheese is melted and bubbly.
Garnish with fresh basil or parsley before serving.
Notes
Air Fryer Option: Cook at 375°F for 5–7 minutes.
