Ingredients
1 ½ lbs boneless, skinless chicken breast, cut into bite-sized pieces
2 tbsp all-purpose flour (or gluten-free substitute)
1 tsp Italian seasoning
1 tsp salt, or to taste
½ tsp black pepper
1 ½ tbsp olive oil
3 tbsp unsalted butter
4 cloves garlic, finely minced
2 tbsp fresh parsley, chopped
Optional: Juice of ½ a lemon, for brightness
Instructions
Pat chicken pieces dry with paper towels. Toss with flour, Italian seasoning, salt, and pepper until lightly coated.
Heat olive oil in a large skillet over medium-high heat until shimmering.
Add chicken in a single layer, leaving space between pieces. Cook 6–7 minutes, turning halfway through, until golden brown and cooked through (165°F internal temperature).
Reduce heat to low. Add butter and garlic, stirring gently until butter melts and garlic becomes fragrant.
Sprinkle with fresh parsley and a squeeze of lemon juice if desired.
Serve immediately while hot and buttery.
Notes
Chicken thighs: Boneless, skinless thighs can be swapped in—just cook slightly longer.
Storage: Keep leftovers in an airtight container up to 3 days in the fridge, or freeze for up to 2 months.
Reheating: Best reheated in a hot skillet with a little olive oil to restore crispy edges.
