Description
A healthy and flavorful Mediterranean dish featuring large onions filled with a savory mixture of lean meat, rice, and feta cheese.
Ingredients
Scale
- 4 large onions
- 1 pound ground lean beef or lamb
- 1 cup jasmine or basmati rice (uncooked)
- 1 cup tomato sauce
- ½ cup crumbled feta cheese
- 3 tablespoons olive oil
- ¼ cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Peel the outer skins of the onions and carefully cut off the tops. Hollow out the inside of each onion, keeping the outer layer intact.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add chopped onion remnants and sauté until soft, about 5 minutes. Add ground meat and cook until browned, then drain excess fat.
- Stir in uncooked rice and tomato sauce. Let it simmer on low heat for about 10 minutes. Season with salt and pepper.
- Remove from heat and stir in crumbled feta cheese and parsley.
- Carefully fill each onion with the mixture, place them upright in a baking dish, and drizzle with remaining olive oil.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until onions are tender.
- Let cool slightly before serving, drizzling with olive oil and garnishing with fresh herbs.
Notes
Serve with a side salad and warm pita for a complete meal. Consider adding roasted vegetables or chili flakes for extra flavor.
