These Low-Carb Lemon Garlic Zucchini Noodles are light, fresh, and bursting with flavor. A quick and easy dish ready in under 20 minutes—perfect as a main course, side, or pasta alternative.
Ingredients
2–3 medium zucchinis, spiralized
2 tablespoons olive oil
2–3 cloves garlic, minced
2 tablespoons fresh lemon juice
½ teaspoon lemon zest (optional)
Salt and black pepper, to taste
¼ teaspoon crushed red pepper flakes (optional)
¼ cup freshly grated Parmesan cheese (optional)
Fresh parsley or basil, chopped, for garnish
Instructions
Spiralize the zucchinis into long noodles. Pat dry with a paper towel to remove excess moisture.
Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
Add the zucchini noodles to the skillet and cook for 2–3 minutes, tossing gently until just softened (al dente texture).
Stir in lemon juice, lemon zest, salt, black pepper, and red pepper flakes (if using). Toss to coat evenly.
Remove from heat and top with Parmesan cheese and fresh herbs. Serve immediately.
