- 24 Ladyfinger Cookies
- 1 cup Mascarpone Cheese
- 1 cup Heavy Cream
- 1 cup Fresh Raspberries
- 1/2 cup Powdered Sugar
- 1 cup Espresso
- 1 tsp Vanilla Extract
- 2 tbsp Cocoa Powder
Instructions
- Prepare the Espresso by brewing it and letting it cool to room temperature.
- Mix the Cream: In a large bowl, combine mascarpone, whipped heavy cream, powdered sugar, and vanilla extract; beat until light and fluffy.
- Dip the Ladyfingers briefly into cooled espresso.
- Layer the Dessert: Start with a layer of soaked ladyfingers, followed with half of the mascarpone mixture and half of the raspberries. Repeat the layers.
- Chill the dish covered for at least 4 hours.
- Serve chilled, dust with cocoa powder, and enjoy!
Notes
For a lighter option, you can substitute half the mascarpone with Greek yogurt. Be careful not to oversoak the ladyfingers.
