Ingredients

  • 24 Ladyfinger Cookies
  • 1 cup Mascarpone Cheese
  • 1 cup Heavy Cream
  • 1 cup Fresh Raspberries
  • 1/2 cup Powdered Sugar
  • 1 cup Espresso
  • 1 tsp Vanilla Extract
  • 2 tbsp Cocoa Powder

Instructions

  1. Prepare the Espresso by brewing it and letting it cool to room temperature.
  2. Mix the Cream: In a large bowl, combine mascarpone, whipped heavy cream, powdered sugar, and vanilla extract; beat until light and fluffy.
  3. Dip the Ladyfingers briefly into cooled espresso.
  4. Layer the Dessert: Start with a layer of soaked ladyfingers, followed with half of the mascarpone mixture and half of the raspberries. Repeat the layers.
  5. Chill the dish covered for at least 4 hours.
  6. Serve chilled, dust with cocoa powder, and enjoy!

Notes

For a lighter option, you can substitute half the mascarpone with Greek yogurt. Be careful not to oversoak the ladyfingers.
