- 1 cup Dried Coconut Flakes
- 1 tablespoon Lime Zest
- 1/4 cup Lime Juice
- 1 cup All-Purpose Flour
- 1 cup Granulated Sugar
- 1 teaspoon Baking Powder
- 1/2 cup Unsalted Butter
- 2 large Eggs
- 1 cup Powdered Sugar (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- Sift together the flour, granulated sugar, baking powder, and a pinch of salt in a large bowl.
- Create a well in the center and add melted butter, eggs, lime juice, and lime zest. Mix until just combined.
- Gently fold in the dried coconut flakes.
- Pour the batter into the prepared pan and bake for 25 minutes or until a toothpick comes out clean.
- While cooling, whisk together the powdered sugar and lime juice for the frosting.
- Drizzle the lime frosting over the cooled bars and let it set before slicing into squares.
Notes
For a vegan alternative, replace eggs with flax eggs and butter with coconut oil.
