A delicious blend of zesty lime and creamy coconut, these bars are a tropical treat perfect for any occasion.


Ingredients

  • 1 cup Dried Coconut Flakes
  • 1 tablespoon Lime Zest
  • 1/4 cup Lime Juice
  • 1 cup All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1 teaspoon Baking Powder
  • 1/2 cup Unsalted Butter
  • 2 large Eggs
  • 1 cup Powdered Sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. Sift together the flour, granulated sugar, baking powder, and a pinch of salt in a large bowl.
  3. Create a well in the center and add melted butter, eggs, lime juice, and lime zest. Mix until just combined.
  4. Gently fold in the dried coconut flakes.
  5. Pour the batter into the prepared pan and bake for 25 minutes or until a toothpick comes out clean.
  6. While cooling, whisk together the powdered sugar and lime juice for the frosting.
  7. Drizzle the lime frosting over the cooled bars and let it set before slicing into squares.

Notes

For a vegan alternative, replace eggs with flax eggs and butter with coconut oil.
