Description

Ingredients

  • 1 cup couscous
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Fresh parsley, chopped
  • Fresh basil, chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a medium saucepan, bring 1 cup of water to a boil. Stir in a pinch of salt and couscous. Remove from heat, cover, and let sit for 5 minutes. Fluff with a fork.
  2. Zest and juice the lemon, avoiding the white pith. Set aside.
  3. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  4. Add the fluffed couscous, lemon zest, and lemon juice to the skillet. Mix thoroughly.
  5. Stir in grated Parmesan cheese and herbs. Adjust salt and pepper to taste, and cook for another minute.
  6. Transfer to a serving bowl, garnish with additional herbs and cheese if desired, and serve warm.

Notes

For a vegan version, substitute Parmesan with nutritional yeast and olive oil with avocado oil.
