Instructions
Preheat the air fryer to 375°F (190°C). A hot basket helps the ravioli start crisping immediately.
Set up a breading station with three shallow bowls: flour; beaten egg lightly seasoned with a pinch of salt; and the breadcrumb mix (panko + Parmesan + Italian seasoning + garlic powder + a grind of pepper). Stir the crumbs until evenly combined.
Pat each ravioli dry with a paper towel if fresh or thawed so the coating will cling.
One at a time, dredge ravioli in flour (tap off excess), dunk into the egg, then press into the breadcrumb mixture so each side is well coated.
Place coated ravioli in a single layer in the air fryer basket, leaving small gaps for air circulation. Lightly spray the tops with olive oil spray or brush with oil.
Air fry at 375°F (190°C) for 6–8 minutes for fresh ravioli or 8–10 minutes for frozen. At the halfway point (around 4–5 minutes), open the basket and gently flip the ravioli so both sides brown evenly. Add 1–2 minutes if needed to reach a deep golden color.
Remove to a wire rack (not a plate) so they stay crisp. Sprinkle with flaky salt and red pepper flakes while hot, if desired.
Serve immediately with warmed marinara and chopped basil. For best texture, reheat leftovers in the air fryer (350°F for 3–4 minutes) rather than the microwave.
