- 2 cups all-purpose flour
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 cup chopped walnuts
- 1/2 cup honey
- 1/2 cup cream cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the all-purpose flour, baking powder, ground cinnamon, and chopped walnuts.
- In a separate large bowl, combine the softened unsalted butter, granulated sugar, and brown sugar. Beat until light and fluffy.
- Crack in the egg and mix until well incorporated.
- Gradually add the flour mixture to the butter mixture, stirring just until combined.
- Using a cookie scoop or tablespoon, drop rounded amounts of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake for about 12-15 minutes or until the edges start to turn golden brown.
- While the cookies are baking, beat together the softened cream cheese and honey until smooth.
- Allow the cookies to cool completely, then spread cream filling on the flat side of half the cookies and top with another cookie.
- Serve your Baklava Cream Sandwich Cookies on a beautiful platter or store in an airtight container.
Notes
For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend. You can also skip the egg for a vegan version by using aquafaba.
