A delightful twist on traditional baklava, these cookies combine nutty richness and honey sweetness in a convenient sandwich format.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 cup chopped walnuts
  • 1/2 cup honey
  • 1/2 cup cream cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the all-purpose flour, baking powder, ground cinnamon, and chopped walnuts.
  3. In a separate large bowl, combine the softened unsalted butter, granulated sugar, and brown sugar. Beat until light and fluffy.
  4. Crack in the egg and mix until well incorporated.
  5. Gradually add the flour mixture to the butter mixture, stirring just until combined.
  6. Using a cookie scoop or tablespoon, drop rounded amounts of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  7. Bake for about 12-15 minutes or until the edges start to turn golden brown.
  8. While the cookies are baking, beat together the softened cream cheese and honey until smooth.
  9. Allow the cookies to cool completely, then spread cream filling on the flat side of half the cookies and top with another cookie.
  10. Serve your Baklava Cream Sandwich Cookies on a beautiful platter or store in an airtight container.

Notes

For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend. You can also skip the egg for a vegan version by using aquafaba.
