- 2 boneless, skinless chicken breasts
- 1 cup fresh blueberries
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Prepare the chicken by patting the chicken breasts dry with a paper towel.
- Season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken breasts to the pan and cook for 5-7 minutes on each side until golden brown and cooked through (internal temperature of 165°F); remove from skillet.
- In the same skillet, add minced garlic and cook for 1 minute until fragrant.
- Toss in fresh blueberries and lemon juice, stirring gently until blueberries burst, about 5 minutes.
- Return chicken to the skillet, nestle among the blueberry sauce, sprinkle with thyme, and cook for an additional 2 minutes.
- Serve the chicken with blueberry sauce spooned over the top and a final sprinkle of thyme.
Notes
Serve with grain side dishes or salads for a complete meal. Use a meat thermometer to check the chicken’s doneness.
