Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Prepare the chicken by patting the chicken breasts dry with a paper towel.
  2. Season both sides with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add chicken breasts to the pan and cook for 5-7 minutes on each side until golden brown and cooked through (internal temperature of 165°F); remove from skillet.
  5. In the same skillet, add minced garlic and cook for 1 minute until fragrant.
  6. Toss in fresh blueberries and lemon juice, stirring gently until blueberries burst, about 5 minutes.
  7. Return chicken to the skillet, nestle among the blueberry sauce, sprinkle with thyme, and cook for an additional 2 minutes.
  8. Serve the chicken with blueberry sauce spooned over the top and a final sprinkle of thyme.
