- 1 cup cottage cheese
- 3 large eggs
- 1 cup rolled oats
- 1 cup blueberries (fresh or frozen)
- 2 tablespoons honey or maple syrup
- 1 teaspoon cinnamon
- 1 cup milk (whole, low-fat, or plant-based)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C).
- Grease an 8×8 inch baking dish with butter or cooking spray.
- In a large bowl, mix the rolled oats, cinnamon, and a pinch of salt until well combined.
- In another bowl, whisk together the cottage cheese, eggs, milk, honey, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and gently fold in the blueberries.
- Transfer the mixture into the prepared baking dish and smooth it out.
- Bake for 35-40 minutes or until the center is set and edges are lightly golden.
- Cool for a few minutes before serving.
