Description

Delicious and bite-sized pancake poppers, perfect for breakfast on the go.


Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3/4 cup milk
  • 1 large egg
  • 1/2 cup chocolate chips
  • 1/2 tsp vanilla extract
  • Cooking spray or butter for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your mini muffin tin.
  2. In a medium mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, combine milk, egg, and vanilla extract; whisk until blended.
  4. Pour wet ingredients into dry ingredients and gently mix until just combined.
  5. Fold in chocolate chips.
  6. Spoon batter into the muffin tin, filling each well about three-quarters full.
  7. Bake for 12-15 minutes until golden and a toothpick comes out clean.
  8. Cool for a few minutes before transferring to a wire rack and serve warm.

Notes

For a healthier option, substitute with whole wheat flour and use Greek yogurt instead of milk.
