Description

A light and refreshing salad made with angel hair pasta, fresh vegetables, and a zesty dressing, perfect for summer picnics and barbecues.


Ingredients

  • 8 oz Angel Hair Pasta
  • 1 cup Cherry Tomatoes, halved
  • 1 medium Cucumber, diced
  • 1 cup Bell Peppers, diced
  • 1/2 small Red Onion, diced
  • 1/4 cup Fresh Basil, chopped
  • 1/4 cup Olive Oil
  • 2 tbsp Lemon Juice
  • Salt and Pepper, to taste

Instructions

  1. Cook the Angel Hair Pasta in boiling salted water for 3-5 minutes until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, wash and chop the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. In a large bowl, combine the cooled pasta, chopped vegetables, and fresh basil. Drizzle the dressing over and toss to coat.
  5. Transfer to a serving dish, garnish with extra basil or pepper, and enjoy.

Notes

For a vegan option, ensure dressings and toppings are free from animal products.
