Ingredients

- 8 oz Angel Hair Pasta
- 1 cup Cherry Tomatoes, halved
- 1 medium Cucumber, diced
- 1 cup Bell Peppers, diced
- 1/2 small Red Onion, diced
- 1/4 cup Fresh Basil, chopped
- 1/4 cup Olive Oil
- 2 tbsp Lemon Juice
- Salt and Pepper, to taste
Instructions
- Cook the Angel Hair Pasta in boiling salted water for 3-5 minutes until al dente. Drain and rinse under cold water.
- While the pasta cooks, wash and chop the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- In a large bowl, combine the cooled pasta, chopped vegetables, and fresh basil. Drizzle the dressing over and toss to coat.
- Transfer to a serving dish, garnish with extra basil or pepper, and enjoy.
Notes
For a vegan option, ensure dressings and toppings are free from animal products.
