Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy, about 3 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
- Gradually add dry ingredients to wet mixture, stirring until just combined.
- Scoop dough onto the prepared baking sheet, leaving space between each cookie. Bake for 10-12 minutes or until edges are golden brown.
- Let cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.
Notes
For chewier cookies, slightly underbake them and consider using more brown sugar than granulated sugar.
