- 2 tbsp butter
- 1 medium onion, diced
- 2 celery stalks, diced
- 1 bell pepper (red or green), diced
- 3 cloves garlic, minced
- 4 cups seafood stock
- 1 cup heavy cream
- 2 tsp Old Bay seasoning
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion, celery, and bell pepper. Cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for 1 additional minute until fragrant.
- Pour in the seafood stock while scraping the bottom of the pot to deglaze it. Bring the mixture to a gentle simmer.
- Once simmering, lower the heat and stir in the heavy cream. Keep stirring to combine all the flavors.
- Add the Old Bay seasoning, salt, and pepper to taste.
- Gently fold in the lump crab meat and let it warm through for about 5 minutes.
- Ladle the stew into bowls, garnish with freshly chopped parsley, and serve warm.
