Ingredients

  • 1 lb fresh lump crab meat
  • 2 tbsp butter
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 1 bell pepper (red or green), diced
  • 3 cloves garlic, minced
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 2 tsp Old Bay seasoning
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion, celery, and bell pepper. Cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for 1 additional minute until fragrant.
  2. Pour in the seafood stock while scraping the bottom of the pot to deglaze it. Bring the mixture to a gentle simmer.
  3. Once simmering, lower the heat and stir in the heavy cream. Keep stirring to combine all the flavors.
  4. Add the Old Bay seasoning, salt, and pepper to taste.
  5. Gently fold in the lump crab meat and let it warm through for about 5 minutes.
  6. Ladle the stew into bowls, garnish with freshly chopped parsley, and serve warm.
