Instructions

  1. Prepare Your Ingredients: Peel and dice the potatoes, and chop the onions finely.
  2. Cook the Potatoes: Boil the diced potatoes in salted water until fork-tender, about 15 minutes. Drain and cool slightly.
  3. Sauté the Onions: In a skillet, melt butter over medium heat, add onions, and cook until translucent, about 5-7 minutes.
  4. Combine the Filling: In a large bowl, mix cooked potatoes, sautéed onions, and shredded cheese. Season with salt and pepper.
  5. Roll Out the Puff Pastry: Roll out pastry to 1/8 inch thickness and cut into circles.
  6. Fill the Pastry: Place a tablespoon of filling in the center of each circle.
  7. Seal and Egg Wash: Fold pastry over, seal edges with a fork, and brush with egg wash.
  8. Bake the Pies: Preheat oven to 400°F (200°C), bake for 20-25 minutes until golden.
