- 2 medium Onions (yellow or red)
- 1 cup shredded Cheese (cheddar or mozzarella)
- 1 package Puff Pastry
- 2 tablespoons unsalted Butter
- Salt and Pepper to taste
- 1 egg (beaten for egg wash, or non-dairy milk for a vegan version)
Instructions
- Prepare Your Ingredients: Peel and dice the potatoes, and chop the onions finely.
- Cook the Potatoes: Boil the diced potatoes in salted water until fork-tender, about 15 minutes. Drain and cool slightly.
- Sauté the Onions: In a skillet, melt butter over medium heat, add onions, and cook until translucent, about 5-7 minutes.
- Combine the Filling: In a large bowl, mix cooked potatoes, sautéed onions, and shredded cheese. Season with salt and pepper.
- Roll Out the Puff Pastry: Roll out pastry to 1/8 inch thickness and cut into circles.
- Fill the Pastry: Place a tablespoon of filling in the center of each circle.
- Seal and Egg Wash: Fold pastry over, seal edges with a fork, and brush with egg wash.
- Bake the Pies: Preheat oven to 400°F (200°C), bake for 20-25 minutes until golden.
