- 4 chicken thighs
- 1 cup apple cider
- 8 oz cremini mushrooms, sliced
- 4 cloves garlic, minced
- 1 onion, diced
- 2 sprigs fresh thyme
- 4 tbsp butter
- Salt and pepper to taste
Instructions
- Pat the chicken thighs dry and season generously with salt and pepper.
- Melt 2 tablespoons of butter in a skillet over medium-high heat and sear the chicken, skin side down, until golden brown, about 5–7 minutes per side. Remove and set aside.
- Add the diced onion and minced garlic to the skillet, sautéing until the onion is translucent, about 3 minutes. Then, add the sliced mushrooms and cook until softened.
- Pour in the apple cider to deglaze the skillet, scraping up any browned bits. Let it simmer for 3–4 minutes.
- Return the seared chicken to the skillet, add thyme, cover, and let it simmer for 25–30 minutes.
- Adjust seasoning with salt and pepper, and serve hot with sauce spooned over the chicken.
Notes
Substitute with skinless chicken for a lower calorie option. Serve with crusty bread or a tossed salad.
