Ingredients

  • 1 cup whole milk
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh raspberries
  • 8 oz dark chocolate (70% cocoa)
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs and stir in the milk, melted butter, and vanilla extract.
  4. Gradually incorporate the wet mixture into the dry ingredients until just combined.
  5. Gently fold in the fresh raspberries.
  6. Divide the batter between the prepared pans and bake for 30-35 minutes until a toothpick comes out clean. Allow to cool in pans for 10 minutes.
  7. For the ganache, heat the cream until just simmering, pour it over chopped chocolate, and stir until smooth.
  8. Once the cakes are cool, assemble by layering ganache and raspberries between cake layers and covering the top with ganache.
  9. Let the ganache set for 20 minutes before serving.
