Description

Delightful and festive Christmas Pinwheel Cookies that add a spark to your holiday gatherings with their vibrant colors and sweet flavors.


Ingredients

  • 2 ½ cups All-Purpose Flour
  • 1 cup Powdered Sugar
  • 1 cup Unsalted Butter, softened
  • 1 large Egg
  • 2 teaspoons Vanilla Extract
  • 1/4 cup Cocoa Powder
  • Red food coloring (gel-based)
  • Green food coloring (gel-based)

Instructions

  1. Cream the softened butter and powdered sugar together until light and fluffy.
  2. Beat in the egg and vanilla extract until fully incorporated.
  3. In a separate bowl, whisk together the all-purpose flour and cocoa powder.
  4. Gradually mix the dry ingredients into the wet mixture until well combined.
  5. Divide the dough in half; color one half red and the other half green.
  6. Wrap each colored dough in plastic wrap and refrigerate for at least one hour.
  7. Roll out both colored dough pieces into rectangles about 1/4-inch thick.
  8. Layer the green dough on top of the red dough and roll into a log shape.
  9. Chill the cookie log again for at least 30 minutes.
  10. Preheat the oven to 350°F (175°C).
  11. Slice the chilled log into 1/4-inch thick slices and bake for 10-12 minutes.
  12. Cool on the baking sheet before transferring to a wire rack.

Notes

Nice to gift these cookies in festive tins or drizzled with icing for extra sweetness. They can be made ahead and frozen for convenience.
