- 2 large Eggs
- 1 teaspoon Vanilla Extract
- Powdered Sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, espresso powder, ground cinnamon, and salt.
- In a large mixing bowl, beat the granulated sugar, brown sugar, and eggs until light and fluffy.
- Stir in the vanilla extract until incorporated.
- Gradually add the dry ingredients into the wet mixture, mixing until just combined.
- Refrigerate the dough for about 30 minutes.
- Form dough balls and roll in powdered sugar until coated.
- Place on the baking sheet with space between each ball and bake for 10-12 minutes.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For a gluten-free option, use a 1-to-1 gluten-free flour blend. You can also substitute eggs with flaxseed eggs for a vegan version.
