- 8 ounces pasta (Fusilli or Bowtie)
- 4 slices cooked bacon
- 8 ounces turkey breast (or rotisserie chicken)
- 1 cup sharp cheddar cheese, diced
- 1 cup cherry tomatoes, halved
- 2 cups lettuce (Iceberg or Romaine), chopped
- ½ cup mayonnaise
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- Boil a large pot of salted water. Cook the pasta according to package instructions until al dente, then drain.
- Chop turkey, slice cherry tomatoes, and chop bacon into bite-sized pieces.
- In a bowl, mix mayonnaise, Dijon mustard, and seasonings until smooth.
- Add cooled pasta to the dressing and toss until coated.
- Fold in the cherry tomatoes, turkey, bacon, cheese, and lettuce.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
