Ingredients

  • 8 ounces pasta (Fusilli or Bowtie)
  • 4 slices cooked bacon
  • 8 ounces turkey breast (or rotisserie chicken)
  • 1 cup sharp cheddar cheese, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups lettuce (Iceberg or Romaine), chopped
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water. Cook the pasta according to package instructions until al dente, then drain.
  2. Chop turkey, slice cherry tomatoes, and chop bacon into bite-sized pieces.
  3. In a bowl, mix mayonnaise, Dijon mustard, and seasonings until smooth.
  4. Add cooled pasta to the dressing and toss until coated.
  5. Fold in the cherry tomatoes, turkey, bacon, cheese, and lettuce.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving.
