Description

A moist and sweet take on traditional cornbread, enhanced with sweetened condensed milk.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 cup sweetened condensed milk
  • 1/2 cup buttermilk
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×9-inch baking pan or line it with parchment paper.
  3. In a large mixing bowl, whisk together cornmeal, flour, baking powder, and salt.
  4. In another bowl, whisk the sweetened condensed milk, buttermilk, melted butter, and eggs until smooth.
  5. Pour the wet ingredients into the dry ingredient bowl and stir until just combined.
  6. Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let the cornbread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a dairy-free version, use plant-based condensed milk and almond milk.
