Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine the cottage cheese, eggs, blanched spinach, diced bell peppers, cheddar cheese, garlic powder, salt, and pepper. Mix until evenly distributed.
- Lightly grease a muffin tin with cooking spray or olive oil.
- Pour the egg mixture into each muffin cup, filling them about three-quarters full.
- Bake for 18-20 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
- Let the egg bites cool in the tin for about 5 minutes before removing them.
