Ingredients

  • 8 oz mushrooms (fresh varieties like cremini or button)
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 4 cups vegetable broth (low-sodium)
  • 1 cup cottage cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper (to taste)
  • Optional garnishes: Chopped chives or parsley

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sliced mushrooms to the pot. Cook for an additional 8-10 minutes until the mushrooms are soft and browned.
  3. Pour in the vegetable broth and add the dried thyme. Bring to a boil, then reduce to a simmer for about 10 minutes.
  4. Remove from heat and let cool slightly. Using an immersion blender, carefully blend the soup until smooth, then return to the pot.
  5. Season with salt and pepper to taste. Ladle into bowls, garnishing with fresh herbs if desired.
