Instructions
- Preheat your oven to 400°F (200°C).
- Place the whole wheat tortilla on a parchment-lined baking sheet.
- Spread an even layer of tomato sauce over the tortilla.
- Scoop cottage cheese generously over the tomato sauce.
- Sprinkle shredded mozzarella and add pepperoni (or turkey pepperoni) along with bell peppers.
- Drizzle olive oil over the toppings and sprinkle with Italian seasoning.
- Bake for 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, allow to cool slightly, then serve and enjoy.
Notes
For a gluten-free option, substitute the whole wheat tortilla with a cauliflower crust. To enhance flavor, top with fresh basil before serving.
