- 1 cup cottage cheese
- 2 large eggs
- 1 cup almond flour

Instructions
- In a mixing bowl, combine cottage cheese, eggs, almond flour, salt, and baking powder. Mix until fully integrated.
- Place a non-stick skillet over medium heat and warm it for a couple of minutes.
- Scoop about 1/4 cup of the batter onto the skillet, spreading it into a 6-inch circle. Cook for 3-4 minutes until edges are firm and the center bubbles.
- Carefully flip the tortilla and cook for another 3-4 minutes until golden brown.
- Repeat the process for the remaining batter, stacking cooked tortillas on a warm plate until serving.
Notes
For a vegan option, substitute eggs with ground flaxseed mixed with water. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
