Instructions
- Prepare the Gelatin Mixture: Sprinkle gelatin over ½ cup of cold water in a mixing bowl and let it sit for 5-10 minutes.
- Cook the Sugar Mixture: In a saucepan, combine granulated sugar, corn syrup, and ¼ cup of water. Heat over medium-high until it reaches 240°F.
- Combine Gelatin and Syrup: Pour the hot sugar syrup over the bloomed gelatin and stir until fully dissolved.
- Whip the Mixture: Using an electric mixer, beat on high for 10-15 minutes until thick and fluffy; add cotton candy flavoring and food coloring.
- Transfer to a Dish: Grease a 9×13 inch baking dish, dust with powdered sugar, and pour marshmallow mixture, smoothing it out.
- Set the Marshmallows: Dust with more powdered sugar, cover, and let set for at least 4 hours or overnight.
- Cut and Serve: Lift out, cut into squares with a dusted knife, and toss in powdered sugar to prevent stickiness.
