Ingredients

  • 15 cloves garlic, peeled
  • 4 cups chicken or vegetable broth
  • 1 medium onion, chopped
  • 1 teaspoon thyme, dried or fresh
  • 1 medium potato, peeled and diced
  • 2 tablespoons olive oil
  • ½ cup heavy cream
  • Salt and pepper, to taste

Instructions

  1. Prep the Ingredients: Peel and chop garlic, onion, and potato. Let garlic sit for 10 minutes after chopping.
  2. Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Add the Garlic and Thyme: Stir in garlic and thyme, sautéing for another minute until fragrant.
  4. Introduce the Potatoes: Add diced potato, stir to coat, then pour in broth. Bring to a boil, reduce heat to simmer, and cook for 20 minutes until potatoes are tender.
  5. Blitz it Smooth: Remove from heat and puree the soup until smooth and creamy using an immersion blender.
  6. Finish with Cream: Return pot to low heat, stir in heavy cream, and season with salt and pepper. Warm through without boiling.
  7. Serve and Enjoy: Ladle into bowls and garnish with fresh thyme or chives, serving with crusty bread.

Notes

For a lighter version, substitute heavy cream with Greek yogurt. This soup can be frozen for up to 3 months.
