Description

A delightful cranberry mousse pie combining tartness and creaminess with a crunchy graham cracker crust, perfect for celebrations.


Ingredients

  • 2 cups fresh cranberries
  • ¾ cup sugar
  • 1½ cups graham crackers (crumbled)
  • ½ cup melted butter
  • ¼ cup sugar (for crust)
  • 8 oz cream cheese (softened)
  • 1 cup heavy cream
  • 1 envelope gelatin
  • ¼ cup warm water
  • ¼ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Crush graham crackers and mix with melted butter and sugar. Press into a pie pan and bake for 10 minutes. Allow to cool.
  2. In a saucepan, combine cranberries, sugar, and water. Cook over medium heat until cranberries burst, about 5 minutes. Remove from heat and let cool.
  3. Beat cream cheese until smooth, then add cooled cranberry mixture. Whip heavy cream until soft peaks form, then fold into the cranberry mixture.
  4. Dissolve gelatin in warm water and add to mousse mixture.
  5. Pour mousse into cooled crust, cover, and refrigerate for at least 4 hours or overnight.
  6. Serve with whipped cream, fresh cranberries, or chocolate shavings.

Notes

For a lighter option, substitute heavy cream with coconut cream and regular cream cheese with vegan cream cheese.
