A delightful cranberry mousse pie combining tartness and creaminess with a crunchy graham cracker crust, perfect for celebrations.
Ingredients

- 2 cups fresh cranberries
- ¾ cup sugar
- 1½ cups graham crackers (crumbled)
- ½ cup melted butter
- ¼ cup sugar (for crust)
- 8 oz cream cheese (softened)
- 1 cup heavy cream
- 1 envelope gelatin
- ¼ cup warm water
- ¼ tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Crush graham crackers and mix with melted butter and sugar. Press into a pie pan and bake for 10 minutes. Allow to cool.
- In a saucepan, combine cranberries, sugar, and water. Cook over medium heat until cranberries burst, about 5 minutes. Remove from heat and let cool.
- Beat cream cheese until smooth, then add cooled cranberry mixture. Whip heavy cream until soft peaks form, then fold into the cranberry mixture.
- Dissolve gelatin in warm water and add to mousse mixture.
- Pour mousse into cooled crust, cover, and refrigerate for at least 4 hours or overnight.
- Serve with whipped cream, fresh cranberries, or chocolate shavings.
Notes
For a lighter option, substitute heavy cream with coconut cream and regular cream cheese with vegan cream cheese.
