- 2 cups Fresh Cranberries
- ½ cup Granulated Sugar
- 1 cup Heavy Whipping Cream
- 1 tablespoon Gelatin Powder
- 3 tablespoons Cold Water
- 1 teaspoon Vanilla Extract
- 1 ½ cups Graham Cracker Crumbs
- ½ cup Melted Butter
- Mint Leaves (for garnish)
Instructions
- In a medium saucepan, combine fresh cranberries and sugar. Cook over medium heat until the cranberries burst, about 10 minutes. Cool and blend until smooth.
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and sugar. Press into a 9-inch pie plate. Bake for 10 minutes and cool.
- Whip heavy cream until stiff peaks form.
- Sprinkle gelatin over cold water and let it bloom for 5 minutes, then heat gently until dissolved.
- Fold the cooled cranberry mixture into the whipped cream. Add dissolved gelatin and vanilla, mixing gently.
- Pour into the cooled crust and refrigerate for at least 4 hours or overnight.
Notes
For a lighter version, substitute heavy cream with Greek yogurt, and use agave nectar instead of sugar. Chill overnight for the best texture.
