A delightful dessert that marries tart cranberries with creamy mousse in a crunchy graham cracker crust, perfect for holiday gatherings.


Ingredients

  • 2 cups Fresh Cranberries
  • ½ cup Granulated Sugar
  • 1 cup Heavy Whipping Cream
  • 1 tablespoon Gelatin Powder
  • 3 tablespoons Cold Water
  • 1 teaspoon Vanilla Extract
  • 1 ½ cups Graham Cracker Crumbs
  • ½ cup Melted Butter
  • Mint Leaves (for garnish)

Instructions

  1. In a medium saucepan, combine fresh cranberries and sugar. Cook over medium heat until the cranberries burst, about 10 minutes. Cool and blend until smooth.
  2. Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and sugar. Press into a 9-inch pie plate. Bake for 10 minutes and cool.
  3. Whip heavy cream until stiff peaks form.
  4. Sprinkle gelatin over cold water and let it bloom for 5 minutes, then heat gently until dissolved.
  5. Fold the cooled cranberry mixture into the whipped cream. Add dissolved gelatin and vanilla, mixing gently.
  6. Pour into the cooled crust and refrigerate for at least 4 hours or overnight.

Notes

For a lighter version, substitute heavy cream with Greek yogurt, and use agave nectar instead of sugar. Chill overnight for the best texture.
