Description
An exquisite holiday tart featuring a vibrant cranberry orange curd, perfect for impressing your guests.
Ingredients
Scale
- 1 cup fresh or frozen cranberries
- 1/2 cup freshly squeezed orange juice
- 1 tablespoon grated orange zest
- 3/4 cup granulated sugar (or coconut sugar for a low glycemic alternative)
- 3 large eggs
- 1/4 cup unsalted butter, melted (or coconut oil for dairy-free)
- 1 cup all-purpose flour (or almond flour for gluten-free)
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract (or orange extract)
Instructions
- Prepare the tart shell: Combine flour, sugar, and salt in a mixing bowl. Cut in the unsalted butter until the mixture resembles coarse crumbs.
- Form the dough: Add cold water gradually, mixing until the dough comes together. Flatten into a disc, wrap in plastic, and refrigerate for 30 minutes.
- Bake the tart shell: Preheat oven to 350°F (175°C). Roll out dough and fit it into a tart pan. Prick the base with a fork and blind bake for 20 minutes.
- Prepare the cranberry orange filling: In a saucepan, combine cranberries, orange juice, zest, and sugar. Cook until cranberries burst and become syrupy, about 10 minutes.
- Make the custard: Whisk together eggs and melted butter. Gradually mix in the cranberry mixture. Strain for a smoother texture if desired.
- Fill and bake: Pour the filling into the baked tart shell. Bake for an additional 25 minutes until set but slightly jiggly in the center.
- Chill before serving: Allow to cool at room temperature, then refrigerate for at least two hours before serving.
