2 large chicken breasts – seasoned and baked or grilled, then sliced thin.

For the Salad

8 oz rotini or your favorite pasta – holds the dressing well; cooked al dente.

3 cups kale or romaine lettuce, chopped – adds freshness and crunch.

1/2 cup Caesar dressing – creamy, garlicky, tangy; homemade or store-bought.

1/4 cup grated Parmesan cheese – adds richness and umami.

1/4 cup croutons (optional) – adds extra crunch, top just before serving.

2 tbsp candied bacon (optional) – sweet and savory flavor punch.

Freshly ground black pepper, to taste – enhances all flavors.


Instructions

Cook the pasta: Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and rinse under cold water.

Prepare the chicken: Preheat oven to 400°F (200°C). Brush chicken with olive oil and season with garlic powder, salt, and pepper. Roast for 20–25 minutes until cooked through. Let rest, then slice thin.

Prepare the greens: Wash and chop kale or romaine into bite-sized pieces. Massage kale with olive oil if using, to soften leaves.

Assemble the salad: Combine pasta, greens, and sliced chicken in a large bowl. Add Caesar dressing and toss until evenly coated.

Add toppings: Sprinkle Parmesan cheese, croutons, and candied bacon if desired. Finish with freshly ground black pepper.

Serve or chill: Serve immediately or chill 30–60 minutes for flavors to meld.
