2 cups vanilla Greek yogurt
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
1 cup mixed berries (fresh or thawed frozen)
1/4 cup granola
2 tablespoons shredded coconut
2 tablespoons mini chocolate chips
1 pinch salt
Instructions
In a medium bowl, whisk together the yogurt, honey (or maple syrup), vanilla extract, and salt until smooth and well combined, with no lumps.
Line a rimmed baking sheet with parchment paper. Pour the yogurt mixture onto the sheet and spread it into an even rectangle about 1/4 inch thick, using a spatula to smooth the surface.
Scatter the berries and any optional add-ins evenly over the top. Press lightly to help them stick; the fruit should sit on top, not sink in too far.
Freeze for 2–4 hours, or until completely firm. A thinner layer will take closer to 2 hours; a thicker layer may need the full 4 hours. The bark should snap cleanly when you lift a corner.
Break the frozen sheet into irregular shards or bite-sized pieces. Transfer to an airtight container and keep frozen until ready to serve. It’s best within 2 weeks for peak texture and color.
