- 1 package gnocchi
- 4 cups fresh spinach
- 200g feta cheese
- 1 cup heavy cream
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 pinch nutmeg
- Salt and pepper, to taste
- ½ cup grated Parmesan cheese (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions or until they float to the surface, about 2-3 minutes. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Add the spinach and cook until wilted, roughly 2-3 minutes.
- Pour in the heavy cream and stir gently, allowing it to heat through. Add a pinch of nutmeg, salt, and pepper to taste.
- Add the cooked gnocchi to the skillet, stirring gently to coat each piece in the creamy sauce. Crumble feta on top and fold it into the mixture.
- Taste and adjust seasoning if necessary. Serve warm, garnished with freshly grated Parmesan cheese if desired.
Notes
For a lighter version, consider using half-and-half or coconut cream. Substitute kale or Swiss chard for spinach as preferred.
