Ingredients

  • 1 package gnocchi
  • 4 cups fresh spinach
  • 200g feta cheese
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 pinch nutmeg
  • Salt and pepper, to taste
  • ½ cup grated Parmesan cheese (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions or until they float to the surface, about 2-3 minutes. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Add the spinach and cook until wilted, roughly 2-3 minutes.
  3. Pour in the heavy cream and stir gently, allowing it to heat through. Add a pinch of nutmeg, salt, and pepper to taste.
  4. Add the cooked gnocchi to the skillet, stirring gently to coat each piece in the creamy sauce. Crumble feta on top and fold it into the mixture.
  5. Taste and adjust seasoning if necessary. Serve warm, garnished with freshly grated Parmesan cheese if desired.

Notes

For a lighter version, consider using half-and-half or coconut cream. Substitute kale or Swiss chard for spinach as preferred.
