- 2 lbs baby potatoes (or cubed Yukon Gold/red potatoes)
- 3 tablespoons olive oil (or coconut oil)
- 3 tablespoons Dijon mustard (or yellow mustard)
- 1 cup heavy cream (or half-and-half/plant-based cream)
- 4 cloves garlic, minced
- Salt & pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash the potatoes thoroughly. Cube larger potatoes into bite-sized pieces or halve baby potatoes.
- In a mixing bowl, combine olive oil, Dijon mustard, heavy cream, minced garlic, salt, and pepper. Stir until well blended.
- In a large baking dish, place the prepared potatoes and pour the creamy mustard mixture over them. Toss well to coat.
- Spread the potatoes in a single layer and roast for 35-40 minutes, stirring halfway through.
- Once roasted, remove from the oven and let cool for a few minutes before serving. Garnish with fresh herbs if desired.
Notes
For a lighter version, consider using Greek yogurt instead of cream. Make sure to spread the potatoes in a single layer for optimal crispiness.
