Ingredients

  • 4 large eggs
  • 4 oz cream cheese
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Pinch of nutmeg
  • 1 tbsp olive oil or butter

Instructions

  1. In a large pan, heat olive oil or butter over medium heat. Add minced garlic, cooking until fragrant (about 1 minute). Add fresh spinach and sauté until wilted, about 3-4 minutes.
  2. Reduce heat to low and mix in cream cheese, stirring until melted and creamy. Add water or milk if too thick.
  3. Season with salt, pepper, and nutmeg. Stir well and adjust seasoning as necessary.
  4. In a separate bowl, whisk the eggs until combined. Pour over the spinach mixture in the pan, gently stirring as the eggs cook over low heat (5-7 minutes) until just set.
  5. Remove from heat and serve warm, garnished with additional pepper or Parmesan cheese if desired.
