Description
A delightful vegetable side dish featuring crispy roasted carrots infused with sweet and savory flavors.
Ingredients
- Fresh carrots, halved
- Olive oil
- Salt
- Freshly ground black pepper
- Fresh herbs (thyme or parsley) for garnish
- Honey or maple syrup
Instructions
- Wash and peel the carrots, cut them in half lengthwise.
- In boiling salted water, cook the carrots for 10-15 minutes until fork-tender.
- Drain the carrots and lay on a towel to remove excess moisture.
- Using a glass or potato masher, gently smash each carrot to about half an inch thick.
- Place the smashed carrots on a baking sheet, drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
- Roast in a preheated oven at 425°F (220°C) for about 20 minutes, flipping halfway.
- Drizzle with honey or maple syrup in the last 5 minutes of cooking.
- Sprinkle with fresh herbs before serving.
Notes
For a unique twist, try using coconut oil or experimenting with different herbs.
