Description

A delightful vegetable side dish featuring crispy roasted carrots infused with sweet and savory flavors.


Ingredients

  • Fresh carrots, halved
  • Olive oil
  • Salt
  • Freshly ground black pepper
  • Fresh herbs (thyme or parsley) for garnish
  • Honey or maple syrup

Instructions

  1. Wash and peel the carrots, cut them in half lengthwise.
  2. In boiling salted water, cook the carrots for 10-15 minutes until fork-tender.
  3. Drain the carrots and lay on a towel to remove excess moisture.
  4. Using a glass or potato masher, gently smash each carrot to about half an inch thick.
  5. Place the smashed carrots on a baking sheet, drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
  6. Roast in a preheated oven at 425°F (220°C) for about 20 minutes, flipping halfway.
  7. Drizzle with honey or maple syrup in the last 5 minutes of cooking.
  8. Sprinkle with fresh herbs before serving.

Notes

For a unique twist, try using coconut oil or experimenting with different herbs.
