Instructions

  1. Prepare the Collard Greens: Rinse and chop collard greens finely. Blanch in boiling water for 3-5 minutes, drain, and cool in ice water.
  2. Sauté the Mixture: In a medium pan, heat vegetable oil over medium heat. Add diced onion and minced garlic, and sauté until translucent. Then, add the smoked sausage and cook until browned.
  3. Combine and Season: Stir in blanched collard greens and shredded cheddar cheese, mixing until well-combined and heated through. Season with black pepper as desired.
  4. Assemble the Egg Rolls: Lay an egg roll wrapper in a diamond shape. Spoon 2 tablespoons of filling near the corner closest to you. Fold the bottom corner over the filling, the sides inward, and roll tightly. Seal the edge with water.
  5. Fry the Egg Rolls: Heat enough vegetable oil in a deep pan to submerge the egg rolls. Once hot, gently place a few rolls in the oil, cooking for 3-4 minutes per side until golden brown and crispy. Drain on paper towels.
