Instructions
- Prepare the Collard Greens: Rinse and chop collard greens finely. Blanch in boiling water for 3-5 minutes, drain, and cool in ice water.
- Sauté the Mixture: In a medium pan, heat vegetable oil over medium heat. Add diced onion and minced garlic, and sauté until translucent. Then, add the smoked sausage and cook until browned.
- Combine and Season: Stir in blanched collard greens and shredded cheddar cheese, mixing until well-combined and heated through. Season with black pepper as desired.
- Assemble the Egg Rolls: Lay an egg roll wrapper in a diamond shape. Spoon 2 tablespoons of filling near the corner closest to you. Fold the bottom corner over the filling, the sides inward, and roll tightly. Seal the edge with water.
- Fry the Egg Rolls: Heat enough vegetable oil in a deep pan to submerge the egg rolls. Once hot, gently place a few rolls in the oil, cooking for 3-4 minutes per side until golden brown and crispy. Drain on paper towels.
- Serve and Enjoy: Let the egg rolls cool slightly before serving with your favorite dipping sauce.
Notes
For a healthier option, consider baking the egg rolls instead of frying. You can also substitute plant-based sausage for a vegetarian version.
