Ingredients

  • 1 block firm tofu
  • 1/4 cup teriyaki sauce
  • 1 cup brown rice
  • 1 avocado
  • 2 green onions
  • 1 tablespoon toasted sesame seeds
  • Fresh cilantro

Instructions

  1. Press the firm tofu by wrapping it in a towel and placing a heavy object on top for 15 minutes.
  2. Slice the tofu into even cubes or slabs.
  3. Marinate the tofu in teriyaki sauce for at least 10 minutes.
  4. Cook brown rice according to package instructions.
  5. Sauté the marinated tofu in a skillet over medium heat until golden and crispy, about 10 minutes.
  6. Prepare the avocado by cutting it in half and seasoning it lightly with salt and lime juice.
  7. Assemble the stack with a base of brown rice, crispy tofu, avocado, green onions, and sesame seeds.
  8. Garnish with fresh cilantro and serve warm.
