Ingredients

  • 1 pound Chicken Breast
  • 4 cups Chicken Broth
  • 1 can (14.5 oz) Diced Tomatoes
  • 8 oz Cream Cheese
  • 1 cup grated Parmesan Cheese
  • 1 tablespoon Italian Seasoning
  • 4 cloves Garlic, minced
  • 1/4 cup Fresh Basil, chopped
  • Salt and Pepper, to taste

Instructions

  1. Begin by chopping your fresh vegetables and herbs. Keep these handy for when you start layering flavors in the slow cooker.
  2. Place the chicken breast at the bottom of your slow cooker. Pour the chicken broth over the chicken, ensuring it’s fully submerged.
  3. Add the diced tomatoes, minced garlic, and Italian seasoning to the slow cooker. Gently stir to combine.
  4. Cut the cream cheese into chunks and drop it in the slow cooker.
  5. Sprinkle in salt and pepper according to your taste. Add optional spices if desired.
  6. Set your slow cooker to low for 6-8 hours or high for 3-4 hours.
  7. Once cooked, remove the chicken and shred it with two forks. Return the shredded chicken to the pot, stirring to combine.
  8. Add the grated Parmesan cheese and fresh basil, stirring until the cheese melts into the soup.
