Discover Cucumber Sandwiches that stay crisp are easy to assemble and elevate summer picnics with fresh vibrant flavors and crowdpleasing ideas
Ingredients
Scale
8 slices sandwich bread (white or whole wheat)
4 ounces cream cheese, softened
1 medium cucumber, very thinly sliced
2 tablespoons fresh dill, chopped
1 tablespoon lemon juice
Salt and pepper to taste
Optional garnish: extra dill sprigs or cucumber ribbons
Instructions
Make the herbed cream cheese: In a small bowl, combine cream cheese, dill, lemon juice, salt, and pepper. Stir until smooth and fragrant.
Prep the cucumber: Rinse, pat dry, then slice as thin as possible. Pat slices dry again to keep the sandwich from getting soggy.
Prep the bread: If you like, trim crusts for a classic look. Lightly toast the bread for a touch of extra crunch (optional).
Assemble the spread: Spread a thin layer of the herbed cream cheese on each bread slice to create a moisture barrier and lots of flavor.
Layer the cucumbers: Arrange 2–3 very thin slices on half the bread slices, overlapping slightly for a pretty, fanned effect.
Close and cut: Top with the remaining bread slices, press gently, then trim the crusts and cut into triangles or rectangles. Serve immediately or refrigerate for up to 2 hours.
Notes
