Ingredients

  • Chocolate (70% cacao or higher)
  • Pumpkin Puree
  • Eggs
  • Heavy Cream
  • Brown Sugar
  • Vanilla Extract
  • Graham Cracker Crumbs or Oreo Crust
  • Spices (cinnamon, nutmeg, allspice)

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs or finely crushed Oreos with melted butter and a pinch of salt. Mix until the texture resembles wet sand.
  2. Press the mixture firmly into a tart pan, covering the base and sides evenly. Bake for 10 minutes until set. Cool slightly.
  3. Melt the dark chocolate over a double boiler or in the microwave in 30-second intervals. Stir until smooth and set aside.
  4. In a mixing bowl, whisk together the pumpkin puree, eggs, brown sugar, heavy cream, and vanilla extract. Add the melted chocolate and mix until uniform.
  5. Sprinkle in spices and fold gently to combine.
  6. Pour the filling into the cooled crust and spread evenly.
  7. Bake for 45-50 minutes until set. Allow it to cool at room temperature, then refrigerate for at least two hours before serving.
