- ¾ cup milk (or almond/coconut milk)
- 1 teaspoon vanilla extract
- Vegetable oil (for frying)
- Large marshmallows
- Powdered sugar (for dusting)
Instructions
- In a mixing bowl, combine pancake mix, milk, and vanilla extract until smooth.
- Heat about 2 inches of vegetable oil in a frying pan to 350°F (175°C).
- Optionally freeze marshmallows for 10 minutes to prevent melting.
- Dip each marshmallow into the batter until fully coated.
- Carefully fry coated marshmallows in hot oil for 2-3 minutes or until golden brown.
- Remove with a slotted spoon and drain on paper towels. Dust with powdered sugar before serving.
