Description
A refreshing and sophisticated dessert made with fresh cranberries, perfect for holiday gatherings.
Ingredients
Scale
- 2 cups fresh cranberries
- 1 cup granulated sugar
- 1 cup heavy cream
- 8 oz cream cheese
- 1 tsp vanilla extract
- 1 tbsp gelatin
Instructions
- Prepare the Cranberry Sauce: Combine fresh cranberries and sugar in a saucepan over medium heat. Cook until the berries burst and the mixture resembles a thick sauce, about 5-7 minutes.
- Cool the Sauce: Remove the sauce from heat and let it cool completely.
- Whip the Cream: In a large mixing bowl, whip the heavy cream until soft peaks form.
- Cream the Cheeses: Mix the cream cheese and cooled cranberry sauce until well combined.
- Combine the Mixtures: Gently fold the whipped cream into the cranberry-cream cheese mixture.
- Prepare the Gelatin: Dissolve gelatin in warm water; let it bloom then stir until dissolved and fold it into the mousse mixture.
- Portion into Cups: Spoon the mousse into serving cups or glasses, filling them about ¾ full.
- Chill: Cover the cups with plastic wrap and refrigerate for at least 2 hours to set properly.
Notes
For a lighter option, use half-and-half instead of heavy cream. Ensure to chill the mousse properly for the best texture.
